Food Safety Issues - cooking, freezing, defrosting roast

Expert: Chris Manley - 7/28/2008

Question
If I cook a roast or a turkey brest then vacuum seal it and freeze it; will it be safe to eat at a later date?

Answer
Yes, some points to remember;

-Cook completely, use a thermometer to ensure the correct cooking temperature has been reached.

-Cool completely before sealing.  Ideally, the food should be rapidly cooled in your refrigerator in 6 hours or less to reduce the risk of contamination in the sealer bag.
