Food Safety Issues - pork shoulder

Expert: Carl Copeland - 7/8/2008

Question
I put a 7 pound pork shoulder on the grill at midnight went to bed, the fire went out probably 1 hour into it and it sat on the grill all night...unsafe? I think I know...thanks

Answer
Rob,
How are you doing? That's a lot of pork left out in the warm night for such a long time. I myself would consider it a mistake and would not eat the meat as the longest you should leave out fully cooked meat is two hours. But ultimately the choice is yours.
