Food Safety Issues - vacuum sealing of cooked chicken and beef

Expert: Chris Manley - 7/28/2008

Question
Hi, I cooked up a bunch of hamburger and chicken for my sons upcoming graduation party. I just read somewhere that you arent supposed to vacuum seal it until its room temperature. I cooked it, bagged it, and sealed them all when I was finished bagging them (dont know what is room temperature, but I think they were warmer than that) and then put the bags into the freezer. Do I have to throw all of it out? or is it okay to use.

Answer
You should cool food completely before sealing it to reduce the risk that bacterial contamination could grow while in the sealed bag.

Refrigerating or freezing the food prior to sealing is a preferred method.  Unfortunately the type of growth that might occur in a vacuum sealed bag is difficult to see or smell, so the food should be discarded.
