Food Safety Issues - HEALTH HAZARDS OF COOKING OR REHEATING PREPARED FOOD IN PLASTIC BAGS

Expert: Chris Manley - 9/23/2008

Question
I AM LOOKING FOR ANY SCIENTIFIC STUDY THAT CLEARLY STATES THAT HOT FOODS EXPOSED TO PLASTIC BAGS ARE UNSAFE FOR HUMAN CONSUMPTION. ANY POTENTIAL HEALTH HAZARDS THAT I CAN USE AS A CASE TO STOP MY SCHOOL DISTRICT FROM PLACING HOT GRILLED CHEESE SANDWICHES IN A PLASTIC SELF-SEALING BAG MACHINE AND KEEPING THEM HOT FOR HOURS. THEY SERVE THIS POTENTIALLY CANCER CAUSING FOOD TO 5-12 YEAR OLD STUDENTS, THOUSAND'S OF THEM ON A DAILY BASIS.

Answer
The difficulty you will have in what you are looking for is that not all plastic bags are the same.  Some are specifically designed for this purpose, some are not.  The hot topic right now is the use of polycarbonate water bottles and can liners with hot beverages and foods, this use is not an intended use by the manufacturer, and can release BPA into the water or food.

If the bags are listed as safe for food and rated as safe for the temperatures used when sealing the sandwiches, then testing has been done on the bags to determine if leaching of chemicals from the bags is occurring at high temperatures.

You would need to determine what type of bag is being used, and if it has been specifically designed and tested to be safe for this use.
