Question
I want to start selling my homemade confections from home in Illinois.  What do I need to do?? I was wanting to set up something like a portable shed for my kitchen..what are my requirements for the shed (all of them)Is is 3 compartment sink with an added hand sink?  I also want to use my business as a fundraiser outlet for the local schools.  Can I do this and how do I go about doing it?  Thanks

Answer
Because regulations vary so widely from State to State and from County to County, you are best off asking your question to your local health department.  

In my State we would allow this type of operation provided you were able to have a safe (city or otherwise) supply of water, a 3-compartment sink for ware washing, at least one hand washing sink, and adequate commercial refrigeration, if needed.  A food preparation sink and mop sink may also be required depending on the type of items you prepare, and your local regulations.  Hot water must be adequate for the demand of all the required sinks, this likely means installing a hot water heater solely to supply water to these fixtures.  

You would also need to construct this building so that all floor, wall, and ceiling finishes are smooth, durable, and easy-to-clean.  

Once licensed by your local health department, how you operate the business, for retail or fundraisers should not make any difference.
