Question
I have a vacuum sealed brisket purchased before the sell date of July 1, 2008.
However, it sat in a refrigerator for 6 week before it went into the freezer. Is it
safe to cook and eat?

Answer
6 weeks in the refrigerator is a very long time to store anything in the refrigerator.  You are almost certain to notice a drop-off in quality of the product, and potentially some signs of spoilage, however if you thoroughly cook the brisket (145 degrees for beef), the product will be safe.
