Question
Is it unsafe to put leftover roast and/or potatoes back in the crock pot it cooked in during the day and leave it on low overnight and all the next day for dinner the next evening?

Answer
Yes and no, if the temperature is always maintained at 140 degrees or above, the food is safe.  However, if you allow a roast or potatoes to cool to below 140 degrees for a long period of time (more than 4 hours) they are unsafe to add back to the crockpot.  A safe practice would be to remove only what you need from the crockpot and do not return items to the crockpot if they have been allowed to drop below 140 degrees.
