Food Safety Issues - Eating fish that was left at room temperature.

Expert: Carl Copeland - 1/15/2009

Question
Last night I accidentally left a thin, uncooked fish fillet out of the refrigerator for about 4 - 4-1/2 hours. When I discovered what I'd done, I put it in the refrigerator where it has remained since. I'm wondering if it would be okay to eat if I broil it (about 500 degrees F.) today?

Answer
Hi Shari,

How are you doing?  Any food left out over 2 hours at room temperature is acceptable to bacteria.  Fish is a food that you would definitely be careful of.  Recooking food at any temperature  does not rid it of bacteria. It's just one filet I would not chance it.  For more fish storage info please visit
