Food Safety Issues - mussels

Expert: Chris Manley - 1/8/2009

Question
He Chris,

I bought 1 kg of mussels from our local supermarket today.
They are UK Reared, grown on a "rope" I am told.

like mussels and have not seen them in my store before so I bought on impulse.
When I got them home my wife said we should boil them immediately, but as she was already in the process of cooking dinner, I looked on internet to find out if we could store them.

One site said store in fridge in a bowl covered by a wet towel This is what I did.
We plan to boil them tomorrow. Are we safe to do so?

Regards
Heppy New Year,

Bernard Longstaff
UK

Answer
I typically see mussels stored in buckets or bowls under refrigeration.  The mussels should be safe if they have been held in the refrigerator overnight.  When ready to prepare, tap each one, and only cook those that close their shells completely, those that don't are dead or unhealthy, and shouldn't be eaten.
