Food Safety Issues - uncooked meatloaf

Expert: Carol Schlitt - 10/7/2009

Question
I just made a meatloaf but will not be able to have it tonight as planned.  Is is alright to refrigerate and cook tomorrow?
Thank You!

Answer
Hi Stacia,

Yes, it is safe to prepare a meatloaf and refrigerate it overnight to bake the next day.  The key is refrigerating the product promptly after preparation and then bake directly from the refrigerator in a 350 degree oven.  Cook to an internal temperature of 160 degrees and enjoy!!!
