Question
Thank you for taking this question.  After purchasing commercial vacuumed packed tuna fish, how do I handle for proper storage, at home? Next preparing it to eat, then storing right after in the fridge.  How long does tuna in mayonnaise hold in the fridge?  Are vacuumed packed foods radiated also?  Plwase give more info on vacuumed packed foods, and radiated foods.  I can't find any info else where. Thank you so so much !!!!

Answer
The vacuum packaging used for the tuna pouches should be handled in the same manner the cans are.  The only real difference between the two is the size and shape of the package.  If a food product is radiated it will be indicated on the label.  

Once prepared the tuna and mayo should be consumed within 3-5 days.  

Vacuum packaging and irradiation are methods used to extend the shelf life of foods.  Vacuum packaging removes air, making the product less susceptible to spoilage from bacteria, mold and fungus.  Irradiation removes bacteria and other spoilage organisms from the surface of the food prior to packaging, reducing spoilage, and extending the shelf life.
