Food Safety Issues - Safety of Kitchen Utensil Material

Expert: Chris Manley - 2/25/2009

Question
Is it safe to use Brass Utensil for Cooking?
Which is better for health Aluminum or Brass utensil for cooking food?

Answer
There are numerous and conflicting studies that indicate both of these materials may cause long term health effects if used as food contact surfaces.

Most studies indicating a health risk suggest using brass or aluminum for highly acidic, or very high temperatures may be harmful.  Brass equipment may have some traces of lead on the surface when new and leach lead into food if left in contact with it over extended periods of time, more than 4 hours in most cases.

If given the choice of only these two, I would choose aluminum; however, stainless or plastic may be a better choice than either brass or aluminum.
