Food Safety Issues - greasy particles in our olive oil

Expert: Chris Manley - 2/2/2009

Question
we use olive oil in our bread baking and for the first time have noticed greasy white particles in the bottom of the bottle, is it ok to use, is it a health hazard?  What is it?
thanks,
Pete

Answer
It sounds like the oil has been refrigerated or even frozen at some point during transport and storage and has partially congealed, like an oil based salad dressing sometimes does if it has been made at home from regular olive oil.  Normally, they should go back into solution when the bottle is warmed.
