Food Safety Issues - Colour of steak

Expert: Carl Copeland - 3/7/2009

Question
I bought some sirloin steak today from the butcher - and when I opened the bag one piece is dark brown/purple and looks a bit wrinkled. The other pieces look fine on one side but streaky on the other. Are they safe to eat?

Answer
Hello Melinda,

The discoloration of the meat is an indication of the amount of oxygen which causes the meat to be dark brown/purple. This is not an indication that the meat is bad. I would probably eat it however if you are unsure you can always take the meat back and let the butcher explain why the meat is this way. For more meat storage info please visit
