Food Safety Issues - Condiment storage & use

Expert: Chris Manley - 6/4/2009

Question
Chris,
My question:  Are condiments (individual packets)that have been put in the refrigerator, and are found that they are not needed for meal service, can they be returned to the dry shelf storage area? Are they safe to eat?

Answer
If the packets require refrigeration, and are received refrigerated, they should not be reused once they are taken out of refrigeration.  If the packets do not require refrigeration, ketchup, mustard, mayonnaise, etc., they can be returned to the dry storage shelf if not used.
