Question
We are making 400 kebobs (beef/veggies and chicken/veggies) for a wedding and the plan is to assemble on Friday evening after work when we have lots of help and then to refrigerate until Sunday when they will be grilled.  Is this OK?  I was afraid the uncooked meat would contaminate the veggies.  Probably being over-cautious but don't want people to get sick.

Answer
If raw meat comes in contact with the vegetables cooking should destroy any bacteria present.  If both types are thoroughly cooked to the correct internal temperature, 165 for chicken and 145 for whole pieces of beef, there should be no risk of contamination.
