When you see "egg" or "egg yolk" in the ingredient statement on your ice cream carton it is most likely pasteurized eggs or powdered eggs. This ingredient is commonly used as an emulsifier in an ice cream mix and is perfectly safe (unless your allergic to eggs of course). Plus with all the possibilities of salmonella due to egg and chicken products there is no way a food manufacturing facility is going to risk the safety of their products or the consumer.
