Why can shelled eggs be received at an air temp of 45degrees

Hi Tanya,

Shell eggs can be received at 45 degrees air temp because at this temperature Salmonella enteritidis(SE) does not grow.  SE has been associated with shelled eggs and it has been found that if you keep the temperature at 45 degrees or below, SE does not grow. This is why the FDA food code states that fresh shell eggs must be received at 45 degrees or below.

In Illinois where I live, eggs can be received at 45 degrees F but then must be placed in a refrigherator that will hold them at 41 degrees or below.
