Hello

I browned my JD sage sausage for my dressing but left it out overnight I should probably throw it out right?

Hi Kathy,

Unfortunately yes.

Foods such as meat that sit at room temperature all night are capable of supporting the growth of harmful bacteria. One of these bacteria, Staphylococcus aureus, is capable of producing a toxin that is not deactivated by heat.  In other words, reheating a food that has been temperature abused is not a sure way of making it safe to consume.

Best option is to pitch it and start with fresh sausage.
