Food Safety Issues/canned olives past use by date

Is it safe to eat canned olives 3 years over the use by date?
Can says use by Nov 18 2012.

Hi Charles,

If the can is intact and shows no signs of deterioration (rust, dents, swelling, etc) then the olives will be safe to consume.

Use by dates are intended for quality, not safety.  Thus a 3-year old olive will probably not be as appetizing as an olive eaten within the use-by time frame. You may notice color, flavor or texture changes but these are not unsafe -- just not as appetizing as a younger olive.

Merry Christmas.
