Question I used the hot water bath method to can (jar) peaches in 2003. I still have the peaches and have not ate them because they were misplaced during a move. Their color appears consistent when I look into the jar. How long could home-canned peaches be good for??
Answer Hi Becky,
The general rule of thumb for home canned high acid foods (fruits and tomatoes) is up to 18 months. This is based on quality -- not safety as home canned foods can remain safe for several years.
As long as the can is in good shape, the contents should be safe to eat, although the taste, texture and nutritional value of the food can diminish over time.
If the peaches look the same as when you canned them (jar is sealed, no sign of leakage, color of peaches looks good, etc) they are okay to consume. Be prepared for a softer texture peach that may not have the fresh canned flavor of newer canned peaches.
