Food Safety Issues - Chicken Broth

Expert: Carol Schlitt - 9/7/2007

Question
I recently purchased some organic chicken broth and used it one time.  It has been sitting in the fridge for about 4 weeks now and i am trying to decide if it is safe to use.  Can you help?

Answer
Hi Erica,

It is recommended to use chicken broth (organic or otherwise) within 4-5 days of opening.  If you can not do so in that time frame it is recommended to freeze it for future use.

Four weeks is way beyond the recommended use of refrigerated broth.  The recommendation is to not use it as harmful bacteria and food spoilage organisms could have multiplied during that time frame.

Sorry...

Carol
