Food Safety Issues - Defrosted Mince

Question
Hi. I took some frozen mince out of my freezer late thursday 12th night and defrosted it in the fridge with the intension of cooking it friday 13th evening.  Due to a busy weekend I was not able to cook the meat and it is now Monday 16th.  Would it still be safe to cook?

The mince was bought last Monday 9th and frozen on day of purchase. The use by date was yesterday [July 15th].

Hi J,
My mother is scottish so I am going to assume mince is what we call ground beef. Your answer is yes, but cook today. If you do not want to eat it today, still cook it, you can refreeze after cooking. Make sure you reach an internal temperature of 155 degrees to ensure your meat is properly cooked. If you freeze again, you must cool to 70 degrees within 2 hours then reach 41 within 4 hours. At this point you can freeze the cooked meat....Lynn
