Food Safety Issues - Egg expiration

Expert: Carol Schlitt - 12/17/2006

Question
I was just wondering if it was OK to leave eggs out of the fridge for about 3 days after you cook them by hard boiling them.

Answer
Hi Edwin,

No -- it is recommended to refrigerate hard cooked eggs within 2 hours of preparation. They then have a refrigerated shelf life of one week.

A great resource on all kinds of facts on eggs is the Eggcyclopedia which can be found at: http://www.aeb.org/LearnMore/Eggcyclopedia/S.htm

I hope this answered your question.  If you have additional questions please let me know.

Happy Holidays!

Carol
