Can olive oil spoil over time when the can is unsealed but
covered with a cap?

Answer
Hi Robert,

Yes, all oils, including olive oil, can eventually go rancid.

A great website that explains the storage and rancidity of olive oil is the Olive Oil Source: http://www.oliveoilsource.com/olive_oil_storage.htm

I keep my oils in a dark, cool place and find that they last a long time. Some oils that I don't use very often I keep in the refrigerator to prolong their shelf life.
