Food Safety Issues/Freezing Pies

Question
Do I bake my Apple Pies before freezing them?  Or, do I prepare them and freeze immediately and then remove from freezer when I want them and bake?

Answer
Hi Isabelle,

Apple pies may be baked before freezing or baked after freezing -- it's your choice!

Here's how to do both (double-crust apple pie):

Pie baked before freezing:  Bake the pie in a hot oven (425 degrees F) for 30 to 35 minutes. Cool thoroughly. Package and freeze.  To serve: Remove from freezer wrappings. Place pie in a hot oven (425 degrees F) for 20 to 30 minutes. May cover top crust to prevent further browning.

Pie baked after freezing: Wrap pie tightly for freezing. To serve: Remove wrapping and bake in a hot oven (425 degrees F) for 60 to 70 minutes. After 10 minutes, make slits in top crust. May cover edges of crust with aluminum foil to prevent over-browning. Cool and serve.

Hope this helps.  Please let me know if I can be of further assistance.
