Food Safety Issues - Freezing ham

Expert: Carol Schlitt - 12/7/2006

Question
Hi carol

just wanted to check if it was ok to freeze a smoked cooked ham ? i recievd one
as a xmas gift from my work my partener is away and i would like to save it until
thier return ( after sell buy date) can i freeze it then should i cook it ?

Answer
Hi Paul,

Yes -- you can freeze a smoked cooked ham but unlike women, it does not get better with age!  The recommended storage time for a smoked cooked ham is 1 to 2 months.  After that time you may begin to notice off flavors.

It is okay to eat products after their "sell-by" date if they are frozen before the date. Then you have 1-2 months from the freezing date until the ham should be defrosted and used.

Since it is cooked ham, technically all you have to do is defrost and serve.  However, I find the flavor is much better if it is baked in a 325 degree oven (covered with foil or tight fitting lid with a little moisture such as water, juice or soda,is added). Heat until the ham registers at least 140 degrees.

I hope this answers your question.  If you should have additional questions, please let me know.

Carol
