Food Safety Issues - Frozen Meat

Expert: Carol Schlitt - 10/2/2007

Question
I've had liver in freezer over a year is it still any good?

Answer
Hi Ann,

As long as the liver remained frozen the entire time it will be safe to consume. The question now becomes a quality issue -- not a safety issue.  It is recommended to freeze liver up to 4 months.  After that time, the quality of the liver begins to diminish and it may not be as good tasting as fresher frozen liver.

So when you say "is it still good?" that will be a matter of opinion.  If you meant "is it still safe to eat?" then the answer is yes.  If you meant "will it taste good?" then that may be questionable.

Carol
