Food Safety Issues - Frozen Tuna fillet

Expert: Carol Schlitt - 10/7/2007

Question
I purchased frozen tuna fillets on Friday and put in the refrigerator. I was unable to prepare the tuna over the weekend. Will the tuna be fine to sear Monday afternoon?

Answer
Hi Rose,

I assume the tuna is vacuum packaged and that it did not completely defrost until late Saturday -- correct?

If so, it is recommended to use defrosted tuna within 2 days of thawing.  Monday afternoon will be at the end of this window of safety. I would choose a recipe that fully cooks the tuna as opposed to just searing.  While it may be perfectly safe -- you are pushing the envelope.
