Food Safety Issues/Home canned salmon stew

Question
Hi,
One of my friend gave me three boxes of salmon jars. He said that he canned it several years ago. I tried one jar this afternoon. Just microwaved and ate it. It was good. I mean, with respect to taste itself, the salmon stew is still stable, I think. And,three hours after the consumption, I'm still O.K. What's your opinion? Do I need to stop consuming those

Answer
Hi Hyeong,

Good question...

I would ask your friend how they processed the salmon in the jars.  If they did not do them in a pressure canner, pitch them.

If they did follow directions similar to those found on this research-based web site -- The National Center for Home Food Preservation:

http://www.uga.edu/nchfp/how/can_05/fish.html

and they are sealed and look good, then they should be okay to consume.
