Food Safety Issues - Honey Baked Ham

Expert: Carol Schlitt - 12/27/2006

Question
If a Honey Baked Ham was immediately put in refrigerator and remained there for one week, can you still freeze it to eat at a later date?

Answer
Hi Gail,

Normally we say the leftover cooked meats should be refrigerated and eaten or frozen within 5 days.  A week is pushing the envelope on the safety window.

If your refrigerator was kept cold (below 38 degrees) the entire time, I think you could freeze the ham for use at a later date. Once you defrost the ham in the refrigerator please use the ham within 2-3 days.

Hope this answers your question. If you have additional questions, please let me know.

Carol
