Expert: Mary Hughes-Cole - 9/3/2002

Question
How do I keep mushrooms from getting slimmmmy?  When I go to put them in my salad after opening a few days they are awful.  How do you prevent this?

Thanks

Answer
Hello
Louise Holt
Don't put them in your salad.  I am going to give you a website that you might want to read concerning safety issues.  Sprouts and mushrooms can be dangerous.  Any mushrooms I eat are cooked thoroughly before I eat them.  If you have bought some fresh or picked them yourself maybe, but do you remember the most famous cook we ever had on television accidentally killed him self on television eating mushrooms he picked himself.  That is not likely to happen to you with store bought mushrooms but the bacteria that gets on them or the parasites can be deadly.  The lettuce and other things you eat in a salad can be harmful too as they have many parasites as do all vegetables.  Washing your produce carefully in a spoonful of Borax water will prevent this problem from happening.  One tablespoon of Borax in a sink full of water, soak the produce, for at least ten minutes.  Store most produce in an open Ziploc Freezer bag.  I have many tips on food storage write me again and I will give them to you.
You just cannot get any safer than Baking Soda, or Borax.  Especially if you shop at Cost Co and Wall mart, Cost Co has a huge box of Baking Soda for about $4.59 compared to $1. 45 at the grocery store for just a small box, I mean a big box.  And at Wall mart, you can get Borax for $2.87 a box instead of $4.95 a box in the grocery store.
