Food Safety Issues - Pork Tenderloin Safety

Expert: Carl Copeland - 11/19/2007

Question
Hi,
I bought a pork tenderloin last week and the date said it was good until Dec 3rd. That seems a bit long but it was in sealed package.  I took it out and put it in a large baggie to marinate and I forgot about it until tonight. I started marinating it last Wednesday. Since I took it out of the cryovac, do you think it is safe to eat after purchasing 6 days ago.

Eileen

Answer
Eileen,
The recommended timeline for pork that has been taken out of its sealed package is 3-5 days. Pork is something that I wouldn't play with at all. You would be taking a chance as the original packaging was vacuumed sealed more than likely. Sorry for the bad news.
