Food Safety Issues - Room-temp Overnight Turkey RE-Cooked ?

Expert: Carl Copeland - 11/23/2007

Question
One-Half of a thoroughly-cooked 18lb Turkey was inadvertently left Overnight in a ROOM-temperature oven.
It has now been placed in a refrigerator - but it is probably unsafe to eat.
The question is:  Can it (or carved sections of it) be either fried or microwaved hot-enough/long-enough to make it safe for consumption ?
(it was a VERY-expensive free-range Turkey)

Answer
Shelly,
How are you doing?  Any cooked meat or poultry should be refrigerated within 2 hours after cooking.  We know that on a day like Thanksgiving it stays our longer but you are talking overnight.  Re-cooking it will not get rid of the bacteria that has already developed. The decision to keep it or throw it away will be yours.  I would discard it if I were you.  For more Food Storage info go to
