Question I recently received a license to bake pies out of my home and to sale wholesale or retail. The license's restriction is that I can only sell pies that do not need refrigeration. So my question to you is: What pies do not need refrigeration? So far I have come up with apple, blueberry, triple berry, and strawberry. I thought that pumpkin was okay until I saw the answer to Dana's question, how to store a pumpkin pie. Would pecan pie need refrigeration?

Answer Hi Debbie,
Any pie without eggs or dairy products is considered a pie that does not need refrigeration. Currently all fruit pies meet this criteria. Pumpkin has both eggs and dairy products and pecan has eggs -- therefore both must be refrigerated for safe storage.
Apple, peach, cherry, blueberry, etc are all safe pies -- as long as they don't have eggs or dairy products.
