Food Safety Issues - cheesecake

Expert: Carol Schlitt - 9/28/2007

Question
how long is commercially prepared cheesecake (costco) safe to eat.  It has been properly refrigerated.  Thanks

Answer
Hi Carolyn,

Depending upon the preservatives (or lack of preservatives) in commercially prepared cheesecakes, most are considered safe refrigerated up to one week.

I looked on a well known commercial cheesecake website (Eli's) and they recommend refrigerator storage up to 5 days and in the freezer up to 6 months.

I also looked on Costco's website but could not find any storage information for their cheesecakes. But if yours is a Carnegie Deli cheesecake as are shown on the Costco website, the ingredients of the cheesecake lead me to believe that up to 1 week of refrigerator storage should be within the safety window.

Carol
