Food Safety Issues - chichken broth

Expert: Carl Copeland - 11/20/2007

Question
I made some chicken broth from scratch, using the remains of a whole chicken.  I refrigerated it upon completion in a plastic container, but forgot to put it in the freezer.  It's been in the refrigerator for about 3 weeks now.  If I bring it to a boil, can I safely use it for a gravy base?

Answer
Michael,
How are you doing?  We both know that this should have been in the freezer.  But this broth has been in the refrigerator too long. Re-boiling the broth will not reduce the bacteria, and this has been refrigeated to long, throw it out and be safe.  For more Food Storage Info visit
