Food Safety Issues - freezing cheesecake?

Question
I would like to make a smoked salmon cheesecake for an event.  Would it be possible to freeze the cheesecake for 2 days? Or would this diminish the flavors?

Hi joAnne,

Freezing may change the texture and flavor of the cheesecake. Some flavors become stronger when frozen, others weaker. However, 2 days in the freezer is so minimal that I suspect that you will not notice any difference in either. I would recommend not freezing the cheesecake for more than a month and make sure that it is tighly wrapped to keep air from affecting the texture and flavor of the cheesecake.
