Food Safety Issues - freezing chicken and veggie kabobs

Question
I had fresh chicken that I marinated for an hour, made kabobs with mushrooms,
pineapple and zucchinni and then froze. I am planning on using them in two days.
Is this OK?

Hi Jane,

Yes -- this is very okay!!!  In fact you would not have had to freeze the kabobs.  Fresh chicken will stay fresh in the refrigerator for 3-4 days. So if you purchase the chicken today- Saturday- and made kabobs today, you could safely keep them in the refrigerator until Tuesday when they would need to be grilled at that time.

However -- just a word of suggestion -- kabobs do the best when prepared and grilled the same day.  Pineapple and zucchini break down structurally when frozen since they have such a high water content. The fruits and vegetables just don't have the same texture as never frozen.  They are safe -- just not the highest quality.
