Question
Can cooked sauerkraut and country ribs, having sauteed onions, be frozen?

Answer
Hi PVE,

Technically you can freeze anything....but I think what you are really asking is "will the sauerkraut, onions and country ribs be of good quality and flavor that I'd want to eat them once they are defrosted?"

Unfortunately, cooked sauerkraut does not hold up well when frozen.  It becomes soggy and flavorless and I don't think you'll like the end product. This is why you don't see frozen meals containing sauerkraut in the grocery store.

However, the country ribs will freeze nicely.  I suggest you freeze the ribs and when you are ready to serve them pair them with freshly cooked sauerkraut and sauteed onions.

Of course you can try freezing a small amount of the sauerkraut, onion and ribs, defrost and reheat and see how you like the flavor and texture.
