Food Safety Issues - frozen meat

Expert: Chris Manley - 9/4/2007

Question
QUESTION: Hello,
I bought a package of por lion baby ribs, that are labled previously frzn. I did not relize this until I took them out of the freezer to defrost. Can I still use them since they were frozen and defrosted once already?

ANSWER: As long as the ribs were never held above 41 degrees for more than 4 hours, they are safe to eat.  The number of times the product has been frozen and thawed should not affect the safety of the meat.

---------- FOLLOW-UP ----------

QUESTION: Hello,
I do not know if the ribs were held at 41 degrees or higher. they were in with the cold meat at the grocery store. I bought them home and froze them. They are red in color and they do not seem to smell.

Answer
It would be safe to assume that they were held at below 41 degrees at the grocery store.  If you brought them home and froze them immediately and are now thawing them, they are safe to use.  As long as food is not allowed to remain above 41 degrees for more than 4 hours it can be considered safe, no matter how many times it has been frozen and thawed.  Always thaw raw meat in your refrigerator, under cold running water or in the microwave.
