Food Safety Issues - mushrooms

Expert: Carol Schlitt - 2/28/2006

Question
I have some cooked mushrooms I would like to save for a few days.Is it advisable to freeze them?Thank you for your help

Answer
Hi Josephine,

Cooked mushrooms will be safe to use if refrigerated after preparing for 2-3 days. For longer storage you can freeze them, defrosting in the refigerator before reheating.

My experience is the mushrooms will deteriorate in quality (they won't be as good as when prepared fresh) but they will be a safe product to eat.

Hope this helps.
