Food Safety Issues/prime rib

Question
We were just given a prime rib roast, large, that has been frozen
since 1991.  Is it even safe to eat after having been frozen that
long?

Hi Kathryn,

As long as the beef has been frozen (not defrosted any time) the meat will be safe to eat.  However, beef does not get better with age, thus the recommendation is to use frozen beef within 1 year for maximum quality.

After 15 years in the freezer, the fat has probably taken on off flavors which in turn has changed the quality of the product.  This is not unsafe -- just unappetizing.

So...I'd suggest you cook the roast and see how it tastes. I'm betting it won't be the best piece of meat you've ever eaten!!!
