Food Science - vegetables

Expert: Carl Hoseney - 11/5/2009

Question
Could you please tell me the difference,  if any, between the nutritional value of canned vegetables vs. freshly cooked vegetables? Thank you very much. Al Brown

Answer
Al,
This is a very broad question that cannot be simply answered.  The answer depends on which vegetables, and what nutritional value.  It would depend on how the vegetables were handled before they were canned or before they were cooked.  So I sorry but I can't give a reasonable answer to your question.

Carl
