Food Science/Dry Tart Cherries


I buy dried Montmorency Tart Cherries.  My question is:  why do they add sugar to the dried cherries?  Seems to me that the cherries would be sweet enough without added sugar.

For the average person Montmorency cherries are too tart whole or dried. Sugar is added to appeal to more people, increase sales and get repeat customers. Unsweetened dried Montmorency cherries are available but you will have to find a local retailer who carries them or is willing to order them for you.

There are also problems with dried cherries clumping so they are usually infused with oil to reduce that. Some retailers infuse dried organic Montmorency cherries with organic apple juice concentrate and organic safflower oil as Eden foods sells -

Montmorency cherries are very high in anti-oxidants and are craved by people who care about their health and immunity.

You can purchase conventionally produced or organic Montmorency dried unsweetened cherries online if you can't find a local retailer. Here is one of many sources available -

As I always recommend, organic if you can afford it... and if you are buying the cherries for their high anti-oxidant properties, organic is the healthiest and most contaminant-free cherry you can buy.
