Question
What does it mean when a forclosure date is extended?

Answer
In marketing an extension if referring to the listing.  The bank may grant a contract to a broker to list the property for six months.  If the property does not sell, the listing contract may be extended.  

I am not sure if an actual foreclosure can be extended.  Usually a court date is set for a hearing and I have not heard of the date being changed once the papers have been filed.  It may be possible though.
