Question
We would like to catch the TGV from Paris in the morning to Epernay, do a tour of Moet and Chandon then have lunch at Le Vieux Puits in Ay.  Looking at hiring  bikes in Epernay as transport rather than trying to take bikes on the train.    

Can we achieve the trip, tour and lunch in a day.

Hello,
    you're going to need good timing. You'll have to take a TGV that arrives in Reims before 9 00. You'll then have to take a local train to Epernay. Allow 30 or more minutes for this. Moet and Chandon is about 10 minutes from the station.A visit with tasting will take about one and a half hours. You'd better check what time they have visits in English.Bulléo only rent bikes from April to October. I'd think about taking a taxi as Ay is only a short distance from Epernay.
  You're going to have to work out your train times on the SNCF site.
