Question how long does it take for babie frys to reach adult hood, or at least to where they won't have to hide anymore. also if i want to dump out the charcoal in my filter and spread it like gravel would it sill do it's job of removing odors and helping keeping the tank clean?

Depending on the type of fish, livebearers usually within a few weeks, about 4 weeks or so, they're large enough to swim with the adult fish.
I wouldn't spread the charcoal/carbon in the gravel. It's only "active" for a short time, not sure exactly since I don't use it, but about a week or two tops. If you want to use it regularly, then it needs to be replaced every week or two, otherwise it's not doing anything.
