I.e. do you say "Ich veranstalte" or "Ich stalte veran" or what exactly?
If possible, could you use the verb in a couple of sample sentences, please?

You can say only "ich veranstalte". The verb is composed of "ver" and "anstalte" and as far as I now you can never seperate "ver" from the other part of the "verb", for exemple "verbrechen" "to do something one shouldn't do". "anstalten" you can't use as a verb on its own, but "brechen" to break, yes.

In fact the verb "veranstalten" is formed with the "prefix" (Vorsilbe, Präfix) "ver" and the noun in plural "Anstalten", that's why the verb "anstalten" doestn't exist on its own like "brechen" in "verbrechen".
Anstalten means the following:
Ạn|stal|ten ‹Pl.›: Vorbereitungen, Vorkehrungen: A. zu einer Reise treffen; * [keine] A. machen (etw. [nicht] tun wollen, [keine] Absichten zu etw. zeigen): er machte A. wegzugehen.
