taurokathapsia (bull leaping)

and also the phrase, 'the bull charges because it is his nature, the man leaps because it is his choice'

the Greek version of taurokathapsia is: ΤΑΥΡΟΚΑΘΑΨΙΑ

The other phrase could be translated as follows:

Ο ΜΕΝ ΤΑΥΡΟΣ ΤΗΙ ΕΑΥΤΟΥ ΦΥΣΕΙ ΕΦΟΡΜΑ, Ο ΔΕ ΑΝΘΡΩΠΟΣ ΕΚΛΕΞΕΙ ΑΝΑΠΑΛΛΕΤΑΙ.
